Simple Baked Salmon Sheet Pan

After a week-long vacation, we starting to get back into the swing of things. Starting this week, we are going to cook more and eat a little lighter at home. Making sheet pan meals are easy to make and great for leftovers. This is where Gorton’s Salmon comes in handy! I love that they come in prepackaged filets, 2 in 1 box. Perfect for one meal or double it with two boxes.

#ad I found Gorton’s Natural Catch Grilled Salmon at our local Marianos. These initially caught my attention because they are all-natural, with no artificial colors or GMO ingredients, and sustainably caught! Usually, frozen seafood is filled with lots of junk, so I was interested in trying these. As an added bonus, they are already seasoned and ready in 17 minutes! They are probably some of the better-frozen salmon filets I’ve had. I threw them on a sheet pan with some other veggies and potatoes and lunch was ready in 25 minutes or so! Check out how I seasoned the veggies and plated the meal below.

Salmon

Cook salmon in 17 minutes or so. Squeeze fresh lemon juice and then I plated them with some dill. Since the filets cook in less time than the veggies and potatoes, you can cook these a little later. They already come seasoned and I didn’t think they needed anything else.

Broccoli, potatoes, and onion

Ingredients:

  • Bag of frozen broccoli (Fresh works too! We just had some already)
  • 1 bag of petite medley potatoes, sliced
  • Sliced 1/2 red onion
  • Sliced 1/2 lemon
  • Squeezed 2-3 tbsp olive oil
  • 2 tbsp paprika
  • 1 tbsp red pepper flakes
  • 1/3 cup everything bagel seasoning
  • 2 tbsp garlic powder red pepper flakes to taste
  • 1/2 shredded parmesan cheese

Bake the veggies for 25-30 minutes until the potatoes and veggies are cooked through. About halfway, I added the salmon. Once it’s done, squeeze lemon juice, and add parmesan to veggies.

Baked veggies and potatoes is my favorite side dish to make. I love adding everything bagel seasoning!
This salmon makes a great lunch or dinner.
