Easy Taco Night Power Bowl

Like easy, quick meals? Ok, me too. Nothing fancy over here. I am always sharing with my instastory family easy meal ideas for you and your family. Especially now more than ever (hello quarantine life!), I am throwing things together that I have in the fridge. This meal idea is so easy and made with Al Fresco Taco Night chicken sausage. It’s so delicious! I made this power bowl, perfect of taco night or any day of the week.

Taco night chicken sausage makes great for an easy weekday meal thats great for the whole family.

This Al Fresco Taco Night chicken sausage is fully cooked and has no antibiotics, which is great when my family is eating it. The first ingredient is chicken, which it should be! The less stuff in it, the better.

This taco night sausage has hatch chiles and classic mexican spices. It’s not overly spicy though, both kids had it for dinner.

I like it because you can make so many meals with it. Quesadillas, tacos, taco bowls and more. I think it would be even great for breakfast too.

This recipe is so easy. I literally had everything already at home and threw it together in 30 minutes. I hope you like it! Enjoy.

The Recipe

Taco Night Power Bowl

 

  • 1 pkg Al Fresco Taco Night Chicken Sausage, diced
  • 1 small avocado
  • 1 cup cooked quinoa
  • 1 12 oz canned corn, drained
  • 1 bag spinach
  • 1/2 cup mexican shredded cheese
  • 1/2 cup cherry tomatoes, diced
  • 1/2 cup chihuahua cheese, crumbled
  • 2 tbsp cilantro avocado dressing
  1. Saute spinach until fully cooked in olive oil

  2. Toss spinach in dressing and set aside

  3. Heat the Al Fresco sausage according to the directions on the package

  4. Cook quinoa according the directions on the package

  5. Assemble bowl starting with quinoa, sausage and build the bowl with the rest of ingredients.

  6. Top off the bowl with dressing (optional)
