In our house, one thing we try to have is a weekly Taco Tuesday night. Although I think we have gotten a little bored by it, I switched it up a bit by adding something new! I think we all have our go-to recipes we like to make. Personally, one of my favorite and easiest is a taco salad. As a busy mom of picky eaters, I am always looking for recipes ready in 30 minutes or less AND one that everyone will love. This is definitely one of them.
Another reason why I also like it so much is because of the various ways to change it up. It can be made for meal prep either for lunch or dinner. Rather than using tortillas, I use lettuce and it can be turned it into a salad. Also, you can add a variety of your favorite ingredients or omit ones you don’t like! Overall, it’s a very versatile dish.
Now let’s talk about the CHEESE! The best part! Taco Bell® Shredded Cheese now comes in three varieties: Zesty Ranch, Taco Night and 7-Layer Blend. This recipe uses the Taco Night, but don’t they all sound good?!
Taco Bell® Shredded Cheeses are made with real cheese and are super melty. They are perfect for quesadillas, nachos, tacos and more. I think there’s so much you could make with all those kinds of cheeses! Most importantly, where can you find them? You can find all varieties at Tony’s Fresh Market in the Chicagoland area.
This recipe only calls for a few ingredients, many you might even have in your fridge. Those are the best for us moms right?! But you can definitely find everything at Tony’s, like the Taco Bell® Shredded Cheese and Taco Bell® Seasoning Mix. Plus, they make some of my favorite guacamole!
Prep Time: 30 min. | Total Time: 30 min. | Makes: 4 servings |
Ingredients |
4 flour tortillas (8 inch) |
1 lb. lean ground beef |
1 pkg. (1 oz.) Taco Bell® Taco Seasoning Mix |
4 cups shredded lettuce |
2 cups hot cooked Spanish-style yellow rice |
1/2 cup guacamole |
1/4 cup sour cream |
1 cup Taco Bell® Shredded Taco Night Cheese |
Directions |
HEAT oven to 425ºF. |
PLACE tortillas into 9-inch square pan, folding up edges of tortillas as necessary to fit into pan and resemble 4 bowl shapes. Then bake 8 to 10 min. or until lightly browned. |
MEANWHILE, cook ground beef with Taco Bell® Taco Seasoning Mix as directed on package. |
FILL tortilla bowls with lettuce, rice, taco meat, guacamole, sour cream and Taco Bell® Shredded Taco Night Cheese just before serving. |

Prepare using lean ground turkey. |
