Honey nut cereal cream cheese balls

For some reason, fall makes me want to bake and cook more, anyone else? I don’t know what it is. I like to wake up early, light my pumpkin candle, drink coffee and create some fun things in the kitchen. However, with a toddler and a baby one on the way, I don’t have all the time in the world now. I like to make things that are easy, kid-friendly and have some nutrients for my growing family.

We are a big cereal family, my son has a few bowls a week, it’s an easy, fast breakfast. But have you ever looked at the ingredients in some cereals? They are filled with sugar and have very little nutrients. I found Honey Nuts by Grainberry at Jewel Osco that is slowly becoming a favorite in our home. It is actually the first cereal to be made with Onyx Sorghum, which has many antioxidants that helps diabetes, heart problems and more. Honey Nuts have 33% less sugar than the leading brands, whole grain oats with no artificial flavors, colors or preservatives, which we LOVE! And most importantly, it’s delicious and my son loves it. It’s a win-win. 

I knew I had to create a snack using Honey Nuts, something easy and small for his tiny fingers.

Then you mash the cereal in a ziplock bag until they are in tiny pieces, ready to be rolled with the cream cheese and chocolate balls.

Honey Nut Cream Cheese Balls

Using Grain Berry Honey Nut cereal for the perfect snack or dessert

  • 1 cup Grain Berry Honey Nuts Cereal
  • 1/2 cup Mini White Chocolate Chips
  • 8 oz Softened Cream Cheese
  • 1/2 cup Mini Chocolate Chips ((for melting))
  • 1 tbsp Honey
  1. Roll into small balls and place in large plate or dish. You can use parchment paper for cookie sheets. 

  2. Place balls in the freezer for 30-60 mins. 

  3. In the meantime, crush the Honey Oats using a large wooden spoon into tiny bits. I would recommend using a large bowl for this. 

  4. Right before taking out the balls from the freezer, melt the chocolate chips for 1 minute in the microwave. 

  5. Dip the balls in the cereal mixture, making sure the balls are completely covered. 

  6. Using a fork, drizzle the chocolate over the balls. 

  7. Place back in the freezer for another 1 hour or longer. (I love them completely frozen)

  8. Enjoy! 

I love the way these turned out! There’s a nice balance of sweet and savory with the from the cereal and white chocolate along with the cream cheese. One of the reasons I didn’t add any sugar was because there was enough natural sugar from the honey and cereal along with the chocolate chips, it didn’t need any. You could also lighten up the recipe by using reduced fat cream cheese or omitting the white chocolate chips. I do suggest leaving them in the freezer for a few hours until you ready to serve them. Warning, they lasted one day in our house. Definitely addicting!
